
I am only down a pound this week. One measly little miserable pound. I keep telling myself that it's better than nothing. And it's hella better than a gain. But - BLAH. I haven't lost just a pound in two months! I remember because it was the weekend of my brother's wedding. My goal was to lose a total of 34 pounds by the time he got married. I ended up only losing a pound the week before and being off my goal by only one pound.
I really hope this is just Labor Day weekend's liquid calorie consumption catching up with me and not anything dreadful like . . . dun, dun, duuuuuuuuuuun . . . a plateau (I feel as though I should whisper that word). I have six pounds to lose by my Jaybird's birthday which is four weeks from today. And I really, really want those six pounds gone! Surely, surely.
I made haystacks this afternoon for us to have as our after dinner snack. The recipe calls to divide the haystacks into six equal portions. Only problem with that, is the chocolate melts super fast once it hits your fingers. I made more like 15 tiny ones when I made them today. They're just as yummy and - BONUS - my two-year-old doesn't end up quite as chocolately when eating them. Score!
We had chicken stuffing casserole for dinner tonight. It's quickly becoming one of my favorite comfort dishes, but it's also a danger food. Why? Because I could sit down and eat the whole pan by myself! Anyhow, thought I'd share the recipe. This is Mommy and Jaybird approved - we both love it.
1 lb boneless, skinless chicken breasts
1 can reduced fat cream of chicken soup
8 oz fat free sour cream
1 small package of herb or chicken stuffing
1 cup chicken broth
1 tablespoon 0-calorie butter (recipes always call for I Can't Believe It's Not Butter, but I use Parkay - hell-o, cheaper!)
Boil chicken until thoroughly cooked. Drain chicken and soak in cold water to cool. Grease 9x13 pan and pour 3/4 of stuffing into the pan. Mix stuffing with butter. If chicken is cool enough, shred into small pieces and spread on top of stuffing. Mix soup and sour cream and pour over chicken mixture. Top with remaining stuffing. Poke holes in the casserole and pour chicken broth over the casserole.
Bake uncovered at 350 for 30 - 40 minutes.
The place I got the recipe from sets the points at 7, but the way I figured it was only 5. I also third the recipe when I make it. That way, there's no leftovers and, therefore, no temptation. Holla!

Faux fried chicken strips (I am only making half the recipe, therefore the points value is much lower)

Snack
Turkey links with BBQ sauce
Total Points: 2
Dinner
Chili Cheese Fries (Since I can't have them in front of the Cowboys game Monday night . . . )
Total Points: 5 or 6 depending on amount of cheese used
